Ayurvedic Avocado Sauces

Cooling & Balancing Sauce for Pitta (Fire/Water)

1 cup cilantro

1/8 cup lime juice

1 TBSP grated turmeric

5 kale leaves

1 medium cucumber, peeled and seeded

1.5 TBSP honey (or maple syrup which is a more cooling sweetener)

1 TBSP fennel seeds, lightly toasted in skillet while stirring for about 2 minutes

1 TBSP coriander powder

1/2 tsp salt

3 medium avocados, halved, pitted and shelled

~ 1 cup water (as needed, depending on moisture in avocados)

Combine all ingredients in powerful blender, mix until thoroughly smooth and enjoy!

 

Nourishing & Warming Sauce for Vata (Air/Ether)

1 cup basil

1/4 cup fresh squeezed orange juice

1 TBSP grated ginger

1 medium carrot, shredded

1-2 TBSP honey (to taste)

1 TBSP cumin seeds, lightly toasted in skillet while stirring for about 2 minutes

1/2 tsp cinnamon powder

1 tsp salt

4 medium avocados, halved, pitted and shelled

~ 1 cup water (as needed, depending on moisture in avocados)

Combine all ingredients in powerful blender, mix until thoroughly smooth and enjoy!

 

Spicy & Invigorating Sauce for Kapha (Earth/Water)

1 cup parsley

1/8 cup lemon juice

1 TBSP grated turmeric

3 stalks celery, juiced

1/2 TBSP raw honey

1 TBSP brown mustard seeds, lightly toasted in skillet while stirring for about 2 minutes

1/2 TBSP freshly ground black pepper

1/4 tsp salt

2 medium avocados, halved, pitted and shelled

~ 2 cups water (as needed, depending on moisture in avocados)

Combine all ingredients in powerful blender, mix until thoroughly smooth and enjoy!

 

Serve over just about anything you can imagine from quinoa to salads to burgers.
