Wild Rice Salad

Serves 4. Preparation time 45 minutes.

1 Cup Wild Rice

1 Large Granny Smith Apple, wait to chop

2 Sticks Celery, chopped

1 Stick Kombu, cut into small pieces

Juice and Grated Peel of 1 Large Orange

1/4 Cup Olive Oil

1/2 Teaspoon Salt

1/8 Cup Fresh Cilantro Leaves, finely chopped

Cook rice according to directions with kombu until grains are tender but still chewy (likely 30-35 minutes).

Drain any excess water.

Mix olive oil, salt, orange juice and orange rind in bowl and stir in celery, cilantro, and warm rice.

Chop apple into small cubes and add to mixture just before serving.
