Kale Salad

Kale Salad with Ginger Miso Dressing

3 bunches curly leaf kale, washed, de-stemmed, and torn into 3-inch pieces

1/3 cup almonds, chopped

1 carrot, shredded

1 beet, shredded

Ginger Miso Dressing

1 TBSP fresh ginger, shredded

2 teaspoons miso paste

1/8 cup olive oil

2 TBSP lime juice

1 TBSP tamari

1 teaspoon sea salt

Place kale pieces in large bowl and gently massage for 3 minutes like you are kneading dough.
Mix dressing ingredients until smooth, then pour dressing over massaged kale leaves.
Add shredded carrots, beets, and almonds.

Serves 3-4
