Sesame Ginger Bok Choy (Serves 2)
1 head bok choy chopped into 3/4 inch slices
1 teaspoon brown mustard seeds
2 teaspoons freshly diced or grated ginger root
1/8 cup water
1/8 teaspoon mineral salt
2-3 Tablespoons organic unrefined sesame oil
1 Tablespoon sesame seeds
*if on a fat-restricted diet: omit sesame oil and water and use 1/8 cup organic vegetable or organic chicken broth instead, and omit sesame seeds and use 1/2-1 teaspoon of lemon juice
In a medium skillet over medium low heat, dry roast mustard seeds until they are fragrant or the first one pops in the pan
Add oil (or broth), ginger, bok choy, salt and stir mixture to coat the greens and stems in oil
Add water and turn heat to medium-high
Steam-saute the mixture uncovered for 4-7 minutes until stems are tender on the outside but firm/crisp on the inside when prodded with a fork.
Sprinkle with sesame seeds (or drizzle with lemon juice)
